Red Chicken Korma

 

DSC_0474You guys  know i made Paalada for Oh Chef Team  … so to go along with Paalada best combination is Chicken Korma. I thought i need to bring some difference in this thats y i made Red chicken Korma 🙂

This Recipe is actually a blend of spices cooked in slow flame to give a juicy and soft chicken Curry . Our Paalada is waiting , so lets start with recipe

                            Red Chicken Korma

Ingredients

  1. Chicken – 1 kg
  2. Onions large-3 finely chopped
  3. Small onions/Shallots- 1 cup halved or Crushed
  4. Ginger garlic- 2 tbsp chopped
  5. Tomato -2 chopped
  6. Chili powder-  3 tbsp
  7. Coriander powder-2 tbsp
  8. Turmeric powder- 2 tsp
  9. Pepper powder- 2 tbsp
  10. Garam masala Powder- 2 tbsp
  11. Salt – as required
  12. Curry Leaves- as required
  13. Chopped Coriander leaves- as required
  14. Oil – as needed
  15. Cloves, Methi seeds, Cardamom – as required for  Initial Tadka
  16. Cashew/ Almond paste – 1/2 cup
  17. Coconut milk- First extract-1 cup

Method 

  1. Wash the chicken well and keep in strainer
  2. Now heat a heavy bottom pan
  3. Add oil to it
  4. Add dry spices like cloves, cardamom, methi seeds
  5. Soon add finely chopped onions, stir until translucent
  6. Now add Small onions and Saute
  7. Saute well and add ginger garlic
  8. Saute well , add the tomatoes and close the pan with lid
  9. Stir in small intervals
  10. Once everything is mixed well and the tomatoes are well blend
  11. Add in masalas one by one
  12. Saute well and add the washed chicken to it
  13. Add salt
  14. Mix well and close with lid
  15. here we should not add water to this, water will come out slowly from the chicken
  16. The chicken should cook for at least 20 mins ,
  17. Mix in between
  18. Once chicken is cooked well, water dries up add in the cashew paste
  19. Mix well again and check salt
  20. Finally add In thick Coconut milk  and mix well
  21. Switch off flame when Bubble starts to come
  22. Add in chopped coriander and close with a lid

Serve hot with Paalada
