Egg Masala – A simple egg curry and a hint of coconut milk to enhance the flavor…
This i had for break fast with idiyappam/String Hopper/Steamed Rice Noodles, its a good combo. A yummy break fast will always give a boost to start your day

Recipe : Egg Masala Time taken :25 mins

Onions-3 thinly sliced
Green chili -1 slitted
Ginger garlic chopped-1 tsp
Tomato -2 finely chopped
Oil -as required
Mustard seed/Dry chili – As required
Turmeric Powder -1/4 tsp
Chili Powder -2 tsp
Coriander powder- 1/2 tsp
Fennel Pwder-1/2 tsp
Garam Masala-1 tsp
Coconut milk – 1/2 cup thick milk
Coriander Leaves- few finely chopped
Heat a Heavy bottom pan , add in oil, then mustard seeds, once popped add in Dry chili .
Add onions, slitted green chili , saute for sometime , once transparent add ginger garlic and saute well .once nicely roasted add in tomatoes and stir well .
Mix everything well , add on chili powder, turmeric powder, fennel powder, coriander powder,Add salt as required and mix well . Add little water , and add in our boiled egg, add curry leaves and coriander leaves, mix well and sim for 5 minutes.
Finally add in Coconut milk and garam masala . Mix well , simmer for few minutes and serve .check for salt, add if required
Best combination is Idiappam/String hoppers
